My Oscar is a very picky eater for some reason. Staple of hikari carnivor sticks and tetra veggie pellets hardly excites him. Besides frozen seafood what can I add to spice things up a bit? He refuses carrots, lettuce, green beans, and iceberg lettuce no matter what size I cut them into

I wouldn't expect a Oscar to eat those things you just listed. Try earth works or crickets. They make good treats and try NLS for a staple food

He hates nls 8 days of nothing but it and he still wouldnt take a single pellet. My impression of oscars was that they are voracious, ravenous creatures who'd eat your finger if it wasnt attatched to your hand

This guy has grown, dont get me wrong. I adopted him at 2" and hes now 7" about 8 months later. Just not the appetite I have read they should have

Get some omega one cichlid pellets the right size for it & feed till it accepts the pellets on a regular basis. Do not treat or do anything till it eats the pellets. Oscars will eat like pigs, but are stubborn as they come just feed till it eats the pellets. battle of wills
