The link above leads to a video of my umbee. In the video, you will see another batch sibling to compare.

These have been growing really slow for me. I assume they may have parasites. The other fish in the tank are growing fine and eating and showing full stomachs. The fish in question and its siblings all seem to have sunken stomachs. Even if it does have parasites, would the parasites change the color? I have noticed the "fading" like color a few months ago. Now it is more apparent.

Parents are pure Umbees.

I think it's under stress and beat up from sibling or tank mates. If you suspect parasite, I would separate it and medicate it. If it's not a infection of some sort, I would still separate and power feed to gain some size.
 
Looks to me that it is extremely stressed and that is probably why it isn't eating. Also the "fading" that you are seeing is probably missing scales from either getting bitten or hitting decorations in tank trying to get away from its pursuers.
