Steamed with soy sauce and sesame oil. Lay the fish on a bed of fresh sliced scallion and ginger, then top with scallion and ginger.

Right now, ancient species. Polypterus and lungfish. Although I am looking for a single centerpiece specimen, so I'm shying away from polys right now.
