Right now its set up with peacock cichlids but I think I want to try out something new in the freshwater department.

What are my options with a 75 gallon tank?

Any Suggestions appreciated

If your thinking tropical

Tinfoil barbs
Angelfish
School of tiger barbs, that looks awsome when you have just a school of a ton of barbs
Bala shark
Clown Loaches

That's all I can think of, just woke up, lol

:headbang275g is a showcase/breeder tank to me.....Growout some owner responsive cichlid that grows to almost a foot and is thick and chunky........Pick a Midas Devil, a wild Oscar(from Rapps), or a 100$+ male Flowerhorn.......:headbang2

Lots of nice Tangs can go in a 75G. You could try Brichardi(better in a species setup as they breed like crazy). Calvus, Comps. and all kinds of shellies. If you post this in the African section you will get some excellent feedback.

I'd go with the tangs 2 you can get many tangs for a 75. I have a few in a 20 for now and they are cool fish
