After a long time with this one tank being set up, I finally got it fish free and have taking it completely down for a good cleaning.

Hard water, lots of deposits, etc. Whole thing needs a good scrubbing and cleaning.

What do y'all recommend? I'm thinking new soap free scrubbie, hot water, and elbow grease. Maybe a little bit of white vinegar...

Suggestions?

Sounds like a good plan. Something stronger like muriatic acid will help if you have bad hard water deposits.

I've always used diluted bleach to clean and disinffect my tanks when I had them down for cleaning. I just make sure I rinse them very well afterwards. Haven't ever had a problem.
