What top dweller's can I get with stock?

They are in a 125 gallon tank.

Current stock:
Electric Blue Acara 4 inches
5 Black Skirt Tetra
African Knifefish 5 inches
3 Synodontis Petricola
Blue Dolphin 2 inches
Fire Eel 7 inches
Senegal Bichir 5 inches

I like silver hatchets but I feel that they may get snacked on.
Maybe African butterfly fish?

Silver hatchet should be fine. Just qt prior to adding to the tank. They always seem to carry ich.

Can add Apollo sharks, danios, cudas and a few pink tail chalceus.

pink tail chalceus are a dedicated top swimmer. cool fish too.

Cool never heard of apollo sharks or pink tail chalceus! solid options.

I've got 12x Red Eye Tetras in my 120 long. They form a nice tight school at the surface. They grow relatively large, and are tough enough to swim with my CA cichlids.

Wow very cool. Do they eat plants? I forgot to mention whatever the fish is they can't eat plants. I had a school of barbs before but they slowly ate plants.

I don't think Red Eyes eat plants. They are cool looking tetras, that rarely get sick. Occasionally they go on sale for a dollar a peice at the big box stores.
