I have an old Nikon F3 HP with related accessories (MD4, whole bag of AIS lens', etc.). I have not shot film in YEARS. Would you keep it for old time sake or sell everything and buy up to date quipment with the proceeds?

Depends on how much sentimental value the F3 has to you. Selling it won't fetch much right now and I'd keep it for old times sakes and also for the times when you just want to shoot some film.
As for your AIS collection, keep them, since they'll meter with your D200 (I've set the function button in front of the D200 for lens input). What you'll get when you do upgrade to newer lenses is autofocus. If that's not something that you need, then I don't see the point in upgrading, but if you do, do let us know.
