So in my community tank I believe I have 2 cichlids holding, they are still quite young as their color has not been fully defined yet, and there is also 4-5 different breeds of cichlids in there. Should I strip them in 1 week? Should I keep the fry even for risk of hybrid?

Do you have the means of housing these extra fish or possibly selling them? I personally would just let the parent cull most of them out due to the risk of hybrids. They will take out a drastic number and you will be left with a handful that's more manageable.
 
I think the info you posted is too vague. people will need to know which cichlid species you have.
if you don't know, post photos.
 
Unless you have good species groups (1 male to minimum 3 females, but preferably 5) then they are likely hybrids. If that bothers you then cull them, if it doesn't then try to keep them alive - just don't sell/give them as something they are not.

Personally, my biggest concern with stripping fry and raising them is space to keep them all. When I started my 125g african cichlid tank (it has since been torn down and waiting to be restarted after a move) I bought about 10 fish. Over time I purchased a few more to bring the total to maybe 20 (but probably more like 15). My tank still had over 50 fish in it within a year - not including small fry that had recently been spit. So, just be careful you don't allow too many to survive and get over run with fish.
