Woke up this morning and it appeared to be scratched and now it has a white dot in the center... Is this just a scratch or is this some sort of parasite/fungus attacking my pacu's eye??

It is hard to say. Watch it closely for a couple days and see whether it get any worse.

I bumped the temp up a few degrees and added aquarium salt. Just to be safe. anything else I should do?

Others may chime in and say something different but to me it looks like the eye is protruding from the head of the fish. Popeye maybe? water params?

Water params are good it's not popeye. Every pacu I have seen their eyes protrude slightly from the fishes head once they reach about 12 inches
