What's the best way to remove nitrites?

I already used 2 16oz bottles of Stress Zyme and 40 pounds of Eco Complete gravel. My Nitrites are around 3.0. Nitrates are at 0. Talked to someone at the lfs and he told me not to change the water so that it would cycle better. Would a change be better or make it worse? Should I try to remove some fish for now. I have a couple Stingrays in there now with 2 - 18 inch Eels, 1 - 5 inch Datnoid, 2 - 3 inch Clown Loaches and 5 - 3 inch Pikes. The tank is a 180 and I am running a 75 gallon wet/dry.
 
Do water changes immediately. Why someone told you not to when you have fish, is beyond me. What test kit are you using?
 
Test strips are not always accurate. Try API liquid. It doesn't hurt to do water changes for now though just to be safe.
 
Easy, maybe but the accuracy and reliability have to be considered. You'll save plenty from a liquid than strips.
 
The one thing that gets me about those test strips is that they do not even check ammonia. And ammonia is the most toxic. With that stock list I would hope that this is not a new tank. So what happened to crash the biological filter? I would do daily 50% water changes until you get the master test kit and find out what that ammonia and nitrite really are.
 
I did a 50% water change about 3 hours ago and it is still at 3.0 and I took my 2 Eels out. Maybe the guy at the lfs was right???
 
No, he isn't. Get API liquid before you can verify your nitrites is 3.0. If your nitrites is in that level, all your fish would have died by now.
