Whats up with my plants?

I planted my plants in eco complete a few weeks ago and I have been dosing flourish and excel. The last few days I have been noticing roots growing from the stalk of the plant. What's causing this?

What type of plants? Some stem plants will grow roots at leaf nodes.

Wisteria and Rotala. It actually looks kinda cool. It kinda looks like a jungle.

That's just how they grow. I was actually thinking of trimming the roots off the shoots, but not sure if that will hurt the plant.
