Whats Your Favorite Type of Cheese?

It depends on what you're putting it on, but my top three are mozzarella, swiss, and american.

impossible to say.

I like so many of them.

but the standouts to me are:

1. melted provolone
2. marscapone (the one in tiaramisu)
3. a good white cheddar
4. a good soft goats cheese
5. montery jack (esp. melted)

My kind of thread! I have several favorites, provolone, monterrey jack, goat, sheep, sharp cheddar, and mozzarella. However, my favorite I've ever tasted was this cheese I've only found in Mexico called Queso Oaxaca. It made the best quesadilla I've ever had!!! Slightly hint of salt, definitive taste, tangy after taste, and general amazingness.
