So I recently just got back into fish after a long hiatus. I purchased a red Severum from a store and was told it will continue to color up I have seen a smaller red Severum at another store that has significantly more color than mine I showed the owner a picture and he says it's just a really nice gold. So my question is when can you consider a Severum a red Severum? Sorry the pics are kinda dull

True "super reds" are bright orange/red from a small size. I've yet to see any evidence that golds color up to become super reds. Mine came to me at 2" and were already bright pinkish-orange. I'd call yours a gold.

Looks like a gold to me. In fish stores I've seen those labeled as red streak gold severum and other similar terms. The true super reds look much more red.

I get that this guy was sold to me as a super red. He obviously is not. The question I'm struggling with is should I be upset I paid for something and it was not that or is this a common mistake he has red or orange on him just not in the amount a super red would

It's fairly common for a fish store to mislabel things. It's not like it's the wrong species all together it's just a different color morph of the same species. If your unhappy with the fish take it back and request a refund.
