If you are looking for wild scorpions just check around any dead oaktree with loose barh or around the lower edges of a scree feild. Use a battery powered blacklight at night for best results, they flouresce. Use plastic forceps to catch them. Be careful, stings really hurt.
 
For common p mantis just order egg masses from mother eart news or garden supply catologues, cheap by mail and you get a lot of them when they hatch. They grow quickly and will eat each other if you don't seperate them.
