why one of my fish is completely gone missing in the tank?

I had two of these fishes, I do not know the name. I am referring to the colorful one.

one of them completely disappeared, I searched entire tank, could not even find the body. I have other fishes which I keep full and they do not attack these fishes. however, I have this shrimp which have a little doubt, but how can this shrimp can catch, kill and eat this fish? this fish is very fast.

Do you think this shrimp could have eaten that fish?

That would be an endler’s livebearer.
I doubt the shrimp killed it.
When did it disappear, it’s possible it died behind a rock and the plecos/shrimp finished it off.

GSPs are known to be the one of the more evil puffers.

Well. If I’m seeing it correct there is a puffer behind the fish in the top pic. The puffer is probably your reason. And he probably ate him.
I agree a puffer is possible, but I doubt a dwarf would. It would have to be one of the bigger puffs in the tank. Amazons are harmless, so it’s down to the gsp or the fig 8 in that case. My money would be on the gsp for size and aggression potential.

dwarf puffers are very peaceful. Amazon puffers are also peaceful. GPS could be the guy, but I have never seen it attack anything. as he is eating fresh live food everyday. I got into a contract with a private supplier who delivers every other day, live blood worms, and Brine Shrimps. all of them seem to love Brine Shrimps more than blood worms and their bellies looks very full everyday and that is why I thought none of them may ever attack any other fish and why would they, if they are eating Brine Shrimps daily.

With predators, just because they are well fed it doesn’t mean they won’t try to eat something. Puffers have bottomless stomachs.

Either your Macrobrachium shrimp, or the puffers are all good for the deed. And sure, the fish may have died before and consumed later. However, I don't think so. The remaining endler.s may not be there long....
 
My money is on the shrimp. I made the mistake years ago of adding a group of shrimp that looked very much like yours. They took down an entire school of cardinal tetras.
