Now I know plants like Anubias and bolbitis will stick to rocks/driftwood. But what about the plastic decor you buy (like fake wood)?

As long as there is something for the roots to grab, then yes. Unfortunately, most plastic decor is smooth. If the fake wood you are talking about has nooks/crannies/holes, then yes. I would either use some black thread or fishing line to hold in place until it attaches.
