I bought the Eshopps 1800 overflow box with a 1 1/2 inch bulkhead. I also bought a sump inlet assembly, that has a 1" input. If I were to downsize the bulkhead to 1", would it make my overflow box overflow? how would it affect my GPH?

It wouldn't overflow. It doesn't work like that. But, you will restrict the flow quite a bit if you reduce it down. Somewhere to the tune of 600gph.
My box is quite big and doesn't hold but 1/3 of water. Can't imagine it overflowing the over flow..... Try it. Keep a close eye on it but I don't think that it will affect it. Good luck!
What is the GPH of your return pump? If the return pump flows more than 600 then you will overflow.
