I think a rainbow wolf fish would be pretty cool. I have a jack dempsey in the 75 gal as well.
What I'm worried about is whether the wolf fish will take a bite out of my senegal bichir.

It might take a chunk out of the JD?
The JD might kill both when it matures. JDs get pretty big and territorial and might claim the entire 75. Personally, I’d remove the JD , but that would free up space for another bichir or two and maybe a top dweller like a hujeta.
FYI- wolf fish are notorious jumpers and can jump through the smallest spaces. So keep that tank sealed and limit splashing from filters/powereheads etc… since that causes more jumping

Ah, it's not looking too good. My JD has already killed a texas and a convict, ended up eating the latter recently when he was only 3 times bigger... and I just read on the wolf fish thread that they shouldn't be housed with aggro cichlids
Oh well

Unless you love the JD, I’d get rid of it. You could do a lot more with a 75 if you did
