Would Bichirs be a good beginner Monster class?

Depends... what makes one fish more suitable over another, specifically?

My philosophy is to start with what you like, but make sure you know what you're doing before you start, and you'll be successfull.

I think pacus might be a little on the large side as a beginner fish. But Yeah get a Senegal they're tough simple fish that don't get enormous, but big enough to be monster.
 
Definitely.
They are very tolerable fish. They will not fight with other fish, as nothing else will look like it. Usually other fish don't bother as well, for the same reasons.
Can live in almost any type of water (provided that it is not saltwater). PH or temp is not a problem.
Go for it.
