Thought this might be an interesting thread topic. I will have to go with Herichthys right now with Amphilophus a close second.
What I like about Herichthys is the fact that these guys are smaller growing but very fiesty for their size, they are a very diverse group with the labridens complex, deppi, bartoni, carpintis, sp turquoise, tamasopoensis, pantostictus, cyanoguttatum etc.. Also since they are threatened throughout some of their range in Mexico, keeping and breeding them is like a mini conservation effort.
What I like about Amphilophus is probably pretty obvious. They are kind of the classic aquarium wet pet, large growing, interactive, very hardy and tolerant of different conditions.
