I wouldn't keep one in a 75, much too small for a snapping turtle. They can grow to almost double that size.

You can't change how big a CST is going to get based on the tank size. The only way to stop a snapper from growing is to kill it. As long as it's got food it's going to grow. However, given high quality food with lots of protein like you said, it will most likely get larger than most specimens.
