It's cause you're messing too much with the tank, causing bacteria bloom, agitated sand etc; patience is key. Since it's a mini ecosystem, it's never going to be 100% spotless, nor should it be; it'll settle down if you let it though, 40-50% water changes, without agitating the gravel will work for floating sediment, other than that I'd let it rest

I don't want it to be spotless. Just not have such a cloudy look. I've had lots of tanks in my life and never had this issue.

It looks to be getting better tho so will continue to be patient.
