For my one and only a PBB would be the ultimate. Grows large and has an awesome pattern.
But if this was based off picking one I already own it would have to be the endli because it is such a beast of a fish. Such a huge presence in the tank.
But if it came down to my favorite in looks, the Faranah lap.

Gotta go with a Lap, don't really care what kind, I love them all. I love the patterns on every variety. I also love the personality of the 2 that I've had, they've been really interactive and not shy at all.
I've had just about all of them and there isn't anything quite like a PBB. Their shape and size is impressive, as is their GIANT block heads. I love their patterns, and can't get enough of their aggressive nature. That, coupled with the rarity, makes them #1 in my book. Congicus is a close second for me.

Ornate- there's a shocker.
My little ornate was inquisitive and friendly. Love the hilarious antics and markings of the ornate. Oh and they are adorable.
