Anubias grows both aquatically and terrestrially. They are usually sold in the terrestrial form and quickly lose their leaves when put aquatically. They shed their terrestrial leaves and sprout their aquatic leaves. This is probably what happened in your case. As long as the rhizome is still healthy the plant comes back.
