Make sure to test for ammonia in your tap. Since your nitrites dont appear until the next day i think your tap has a lot of ammonia and your bacteria converts it to nitrite but then theirs not enough of the 2nd strain of bacteria to convert to nitrates.

You never mentioned flow rate of your sump. Maybe water isn't being turned over enough.
Maybe try small w.c everyday for a week and feed less. Check water parms. everyday.
You can also try to use a bottle of Cycle and see how more bacteria would help
