If I put they in some pots, can I keep some plants (e.g. Echinodorus) in the stingray's tank? I think it would be better, because there would be a better water chemistry (more nitrate/phosphate absorption).

You could always get floating vegetation. Then you could accomplish the phosphate/nitrate absorption and leave the bottom open for the rays.
get some valesenerio plant some in a corner blokkek by wood and it wil be good ,this gves good oxygen en take alot uw fisch nitrates and is an harderd plant
