After a day or so, they almost double in size, and the caps turn convex and take on a brownish color and a slightly fuzzy texture. Anyone got an ID?

No, and unfortunately even hi-res photos will seldom allow for a positive mushroom ID, especially with your garden-variety "toadstools". Often a spore print or microanalysis is required.
On the plus side, I think they look pretty cool in your setup...
I think they're Coprinellus micaceus, or some member of that genus. I was looking for more and I found a lot of fruit flies so I overhaulefd the tank anyway, but I re-planted the two adult mushrooms that were there.
