Florida Gar acting like an Oscar Fish

I haven't seen him act this way before. His normal behavior was sitting on the gravel, swimming, sitting near the surface. Varying between those three, none of them for too long. He probably spent most of his time sitting in the low flow areas of the middle-upper of the tank.

He normally eats pellets, but the other day I gave him some frozen shrimp and ever since he has added swimming like an excited Oscar Fish trying to attract attention for food to his skillset. He sometimes does put his nose on the glass and swing his head back and forth at me... That's why he reminds me of an Oscar, but there seems to be genuine 'happiness' to his swimming now. Perhaps the pellets weren't giving him energy?

Is this an extra normal behavior?
