Is there a proper way to put bamboo in the substrate ?

Do the roots have to be buried in the substrate or should it be left on top ? I was curious because leaving on top the Cory fish appear to be nibbling on the roots. Also I was thinking if the roots are buried will they be able to soak up the elements in the water from within the substrate ?
 
bamboo should not be submerged in the water
it will slowly die
only the roots should be in the water

That's not exactly true from what I have researched, they can stay submerged for at least a year and also they tend to grow themselves out of the water which takes care of that. My main concern was about whether I should bury the roots in sand/gravel or leave the roots exposed.
