I forgot to mention that I'm Changing the 100 gallon into a south American cichlids tank, getting rid of the African and turning the 75 gallon tank into a south American breeding tank.

No way! African's have such great personality! I would totally keep the African's in the 75, and move the South's to the 100, provided they have plenty of room as they grow. You may need to go bigger to keep them happy, depending on how many you have.
 
That would be a good Idea. Except I have some angel fish in the 75 that I had for a long time I don't feel like letting them get torn up

IMO your tanks both look great. Down the road you may Need to improve your filtration... IMO you should be running a 10 x turnover rate with a heavily stocked tank. You don't look over stocked but a compleate stock list would help if you want to share. I would suggest upgrading your penguins to emperors I am extreamely happy with the 2 I run on my 75, 2 would also likely run your 100 with out issues or add one ontop of your canister for a good bio filtration kick as your fish grow.

1 GT
6 black convicts
1 jaguar
1 RTM X Dovii
4 cories
2 fish of paradise
100:
4 large african cichlids

2 senegal birchirs
1 red tailed shark
1 ID shark
1 red devil

Wow. ummm... that's quite the list. i'd think about editing the list long before i think about editing the decor. :) just me. :) especially if your new to the hobby.
