What/how-to make ordinary dishes Extra-ordinary?

You can post either Secrets to success, or whole original recipes.

Me first:
For Better holiday Pumpkin pies:

buy pumpkins now, prices are dropping. No pumpkins are usually available after october.

Cut in half, discard seeds & tough stringy center.
Bake them like squash, until soft.
Scoop out the good innards & freeze in portions required for number of pies you'll make at one time.
This is easy.
Follow the same recipe as on canned pumpkin. EXCEPT substitute fresh pumpkin. it's waiting in the freezer
;-)
ALSO, replace canned condensed milk with whole fresh cream (as in, for whipping).
If you want less calories, half & half works fine too.

When it's time to make pies, thaw pumpkin. press out any watery pumpkin juices with thick paper towels at bottom of bowl.
Put the amount needed for pie into a blender, along with that fresh cream. blend until pumpkin loses stringy texture.

Combine all regular ingredients & bake as normal.
The taste is so much lighter and delicate, that if you want, sugar amount can be reduced. because you aren't covering up the taste of canned pumpkin & yucky rotten milk.

Your family will never like regular pies again.

My mom calls it crack. Cuz its adddictive. And yes technically anything can be referred to as crack. But the question is whether the 'nickname' given correlates to what is being Termed.

Oooh...nice wordplay.Anyone got any good baked macaroni and cheese recipes?
