They are already peeled. They dont peel from white to orange they just develop color or patterns or none And stay white. These have already peeled so the next step would be to see how much they change. They can go through a lot of changes as they grow. ;)

Nice fish. I'm pretty pumped about them. No clue what'll happen to the grey ones but I hear different fish fade or peel at different rates. Again I don't have a lot of experience with orange fish.

Mine were like the grey ones in your pics. They just keep getting Deeper in color. As for the heads, I heard that they dont really develop until after ten inches Im not really sure. I guess I'll have to wait and see.
