How many sunfish for a 75 gal

I was curious how many sunfish can be kept in a 75 gal? I know some get to large and I also know aggression will also play a roll in stocking too. I am interested in Dollar sunfish or Longear sunfish in particular. A few years back I kept two Pumpkin seed sunfish and thought two seemed like too many for a 55 for aggression however I also kept two Rock bass more recently and they seemed fine in the 55 for the time being.

That depends on structure, dithers and male to female ratio, in a 75 g it would be best to have either longear or Dollars with a couple of males and 3-5 females. I would recommend having rocks and driftwood and maybe some large madtoms or Stonecats and shiners as dithers.
 
i have 3 coppernose bluegill, 5 pumpkin seed blue gill a florida gar and a brown bullhead in my 125. i have no aggression problems. in a 75 i could see maybe 5 at the very most. i have no dithers in there as if it is a smaller fish, the eat it.
 
I am planning on putting some rocks and more wood in my tank. What species of shiners would you recommend? Would Fat head minnows work?
 
I have 8 longears and 4 creek chubs in my 75 currently. I use driftwood to break up sight lines. What will happen is you will get one or two dominant sunfish that will grow larger, much faster than the rest and they will stake out their territories and the rest will hang out in what's left. The more structure you have the better. Oh, and you'll need good filtration. I have 2 HOB filters and a large sponge filter on my tank and I do 50% weekly water changes to keep the water clean. If I slack off on that routine even a little bit the tank gets dirty pretty quickly. But, the longears are worth the work IMO.

Fatheads are gonna end up eaten by Longears or Dollars, any of the Luxilus sp shiners would work or Creek Chubs as AmCaleb has; it dosent have to be Shiners, but the Luxilus sp is tough and some of them get too large for Dollars to eat, even Stonecats and Northern Studfish will work.
