Ideas for my GF's first new tank!!! :)

I'd just take her to the store. It's her tank after all, let her pick out what she wants and just tell her if something won't work in the tank (like the initially mentioned discus. Thatd be a no-no.). If you really don't want the usual tetras or whatever in the tank just bring her to a store that stocks lots of the less common species or something.
 
Show her jewel cichlids, they get to about the same size as cons and are brightly colored. My girl loves mine

+1 my gf loved ours untill my Texas ripped ot to bits :( got in trouble for that one, tried to explain its part of the spoils of fishkeeping but she had none of it hahahaha she hates the Texas now calls him a murderer.
I dont think I should tell her what my jardini got through in his lifetime ;)

But they kill EVERYTHING! So it would have to be a pair or single specimen.... My pair is in a divided 20 gallon currently... My male killed every single african cichlid i owned...

You have so many options! One small, colorful fish I'm looking into is peacock gudgeons. They're pretty cheap too!

And although your tank is too small to house discus for life, it could be used as a growout tank if you're planning to upgrade in the future. And they are certainly colorful lol.

I have 3, a pair and an odd man out. So far the pair chases off the other if he comes too close but nothing crazy. I have an albino Senegal and 2 Asian needle noses with em and they don't get bothered. I am moving the pair to their own tank to breed though

IME nothing is safe except other jewels. They don't always pick fights with everybody, but if they do they will win. Or they'll just pick off fins or barbels over time...
