Also for a pair of Leopoldies or Morotos? One thing is that they can live there. But would they have room to swim around, have some roots or plants? (Not filling the buttom, putting longer sticks in the form of a tree, like starting from one place. so i could have Soribum Lima with them.)

yes..as they age there may be more aggression..you'd have to deal with that as it comes.
roots/plants don't do very well with rays.usually uprooted and moved around.

Ok, i have heard that some people hang the roots in the air, so the tank mates can use them, and the stingrays have bottom space. Have you ever done that? Or anyone else for that matter.

They get at least 20" but do grow slower them Leo from my experience.
Saw a big breeding group at a breeders not to long ago.

When people say 20" Its diameter right? I often here the term 20" disc. So im guessing thats just the the diameter over the stingray without the tail ? Right ?

Yes, the tail usually is 2/3 of the disk size depending on the species your keeping
