What substrate would be best? Have one place that has lots of sharks saying do a under gravel filter with crushed coral. Then I have a great Lfs saying use live sand and a sump system or canister filter. I have a 300 gallon stock tank. What do you guys think?

I prefer sand especially for sharks that spend a lot of time lying or moving around on the bottom.

Sand all the way and outside sump. Who recommended an undergravel filter???? This is going to be a messy eater pond so do it right and save yourself future headaches.

I don't want to name the store but they have huge indoor ponds with lots of sharks on under gravel filters on crushed coral. I'm thinking of doing a w/d filter and a protien skimmer. My problem is I may need to put them above the tank

Put it above the tank.... mine is as well. Install a check valve and get good ones that can be replaced/repaired to keep from flooding the tank in a power outage or loosing suction if you are pulling vs pushing.
