Try this: rub down with salt and black pepper and stick rosemary needles throughout the steak. Sear the steak on a hot grill for like 2 minutes on each side. You want it plenty pink in the center with running pink meat juice. Douse with plenty of extra virgin olive oil and devour ;)

Hello; I rented a room in the home of a hunter and his son. He prepared venison in many ways. My favorite dish was venison gravy. I cannot give a recipe. He made chili which was the second best dish. I discovered that I am not particularly fond of venison after a while. Sorry if that is a sacrilege to you venison lovers. I tried to like it and surely ate it is most every way possible.
I did like the rattlesnake, frog legs and pheasant he fixed.
In case I have not offended every one yet, I also do not like mutton nor any of the hard liquors. I do like beer and stout.

Ooh, I forgot a step.....after you've seasoned it, let it marinade for a couple of hours so the rosemary can work its flavor into the meat

This, 2 mins each side; any more than that is a waste of meat

Absolutely 2 minutes each side, I tend to go 3 and 1 but doesn't matter. I personally very much dislike venison, I find it too gamey and I definitely do not enjoy the aftertaste. That being said, honey garlic venison strips are perhaps some of the best wild game I have eaten, second only to the spicy pepperets. When I ate them they were cut into strips and cooked in the honey garlic sauce, great for stiryfry or with sides of whatever, as much as I dislike venison I still find myself thinking about those honey garlic strips (and I am a hot sauce guy, give me any suicide wings and I haven't eaten chocolate or candy in over 5 years because it turns me right off).

Matt when you get back home invest in a smoker. Changed my life man, wait for them to go on sale at TSC, the best way to eat period!
