Is there a such thing as too many water changes?

There is no "should be" with pH, although some fish prefer high, some low.
Some Amazonian species from black water areas can handle as pH as low as 4.
Some Central American and African species pH 8-9.
But most, such as your varied group will do fine with a pH in the neutral area (7ish)
And no you can't do too many water changes, in summer I would do 30%-40% per day, winter every other day. Some discus breeders do 90% per day to get maximum growth.
 
I would eat dirt before I did that. I still have other stuff to do outside of this hobby.
You set the tanks up right and doing a 90% change isn't that much harder then a smaller change, as you have it all set up so you are just piping water in and out, not using buckets. Also discus grow out tanks aren't massive tanks.

I know they aren't. One massive massive (I know there are bigger) tank is enough for me. I change out at least 80 gallons of water per day.
