How much is this over stocked?

She had the Oscar's in the late 80's tbh don't remember the time of growth rate, but guarantee a member will answer that for you.

You are going to have to do at the minimum 40-50% water changes weekly, Oscar's are very susceptible to HITH if water quality is not kept up, possible stunting also.

once you start the water change process how bad could it be to let the siphon drain more, and the refill hose to fill more?

I never understood why stop at 25% or other small amounts of water.

You can do a 90% water change as long as the water parameters are similar, and you use dechlorinaters. I do 50% wc on some of my tanks every alternate day, with the rest at least 50% per week.
