I have a 45 gal bow front tank and would like to put some colorful cichlids in it.(blues, etc) How many can I put in that size tank and which ones can I put together?

Are you planning on Africans or something else? It is generally advised to put quite a few Africans in a tank to keep aggression down.
But, if you are planning on some other cichlids you wont be able to keep as many.

If its only 30" long I wouldn't do anything from Malawi. Maybe some Shellie's and pair of calvus or Juli's from lake tang. Another option would be some kind of south american dwarf.
Agree, stock by length, not gallons. And with a bowfront, the 16" dimension is usually in the center but you should consider the dimension on the side which may be more like 12".

What would be the best type of fish for this tank?

If it were me I'd do a group of 6-8 Neolamprologus Pulcher, they are harem spawner's and make for a fantastic display once they get going.
