Will depend on the genetics mostly. Not all fish will simply develop patterns due to food, maybe with age it'll get colour to it
the one in the pic that's colored up is a male females are a dull brown color and either the spot on their tail is really faded or it don't have the spot on the tail. my male bowfin is colored up similar to the one in the picture.
