Looking for suggestions - peaceful tankmates - large tank!

Take the sponges/filter media/whatever you have in the 75gal. Wash/clean them in the 300gal tank. That gunk that comes out is the new black gold.
Do a 50% water change on your 75gal and add that water to your 300gal. Add a school of 10-15 dithers you want and it should go.

I have used this method for years and Cory from Aquarium Co-op has suggested it on some of his videos as well.

I understand that you added cycled media when starting the tank?
A month later your tank must be cycled. Is your nitrate test faulty perhaps? Do you shake the bottle well before testing? Have you tested with the same test your other tank?

It is possible that due to the larger volume of water and smaller bioload that nitrate or everything else gets diluted enough not to be detected by a test. This is especially the case if you've done water changes as well...If I cycle a tank using cycled media, it only takes days, not weeks for the tank to cycle..

Well we didn't ADD the media from the other tank until a couple of weeks ago. Yes, I shake the heck out of the bottle and follow each step exactly. The strips aren't showing any nitrates either. I do now have an Ammonia reading (about .25), so maybe we're moving in the right direction.

You could try removing the tetras at night turn off all the lights leave the tank alone for a few hours, and then shine a bright head lamp or handheld light on them and scoop them.
