I have a 125 gallon aquarium with a pair of jack Dempseys 6-7 inches long, and one Texas cichlids about the same length. I have a divider in the tank separating them right now, but I bought a 75 gallon to put the Texas cichlid in by himself. I want to do a full a scape with driftwood and some rocks in the 125 and would really like some good looking dither fish to make the jds more active. Right now they will eat out of my hand, but stay hiding in the driftwood most of the time.

Livebearer such as Swordtails.

Mix in a grouping of Firemouths, and a school of Buenos Aires Tetras. I have five FM's in my 120 long, getting along fine with an adult Red Texas, young adult female FH, and a Juvenile GT as well as numerous Botia Loaches. They'll add color and activity to your tank. FM's are a lot tougher than you might think.

Would it be possible to have giant danios, some loaches of some kind, and maybe some of the giant sailfin mollies?

It's always a gamble when stock g with certain cichlids and things can often go either way. A lot will be trial and error unfortunately.
All we can do is give the most probable answer.
I would say giant danios would be fine as long as they were a decent size when introduced. Loaches I'm not sure. They seek the same territory in a tank as cichlids so could be trouble.

Botia Modesta / Red Tails, work well with my Central Americans. I have four of them. A thick, high bodied Botia. Strong, fast and nice dark Olive green / gray color with red fins. The "Linebacker" of the Loach community.
