Dwarf water lettuce as fish food?

I know some people use duckweed to feed their fish all the time but I was wondering if you could do the same with dwarf water lettuce?

I scoop mine out all the time to keep it from covering the entire surface. Could one potentially let it air dry and turn it into some kind of flake food?

Do you have any fish that will eat plants?
