Best to feed both since some fish prefer to feed on top, others at the bottom, and also to reduce crowding in one level during feeding.

i feed my community tank ,the Betta tank and the guppy tank new spectrum, then hikari sinking wafers for the cories in the community 55 they can’t get enough and the glo fish and skirt tetras like to grab em to and carry them around while nibbling, my dogs like the food i feed my fish too if i drop any and actually beg at all the Tanks even the one i am in the progress of scaping, but yeah what your fish tells you with color, health as activity as well as where you feed is your best bet to target for where you feed as well as what you feed.
For the large tanks I've got Hikari cichlid gold sinking & floating, cichlid staple sinking & floating. Of all 4 sorts medium and large, so 8 different pellets. And Hikari carnivore sticks as well.
I've mixed them up in a large empy fish food can to feed my fish. This way there's food for all sorts of fish in the tank
Sometimes i will add another brand or kind of fishfood as well.
Hikari gold sinking Medium for my bichirs and floating small For my characins. Been using this brand for years. Around $20-21 per 2.2 lb bag online. Believe the comments stating that it clouds the water. It’s likely due to overfeeding. I’ve never had a problem.
