Just got my male 12" almost 3 years old. Fed on hakari pellets only. Should I slowly add some veg/algae into his diet? Temps at 30 degrees, twin filtration 100g tank. Keeping eye on nitrates so it doesn't go over 5ppm. Very rare in Australia and his the only one in my state.
any hints and tips and do's and don'ts ??

Sounds to me like everything is perfect.
Some algae laced pellets wouldn't hurt, I used AlgaeMax, and also pellets for made marine vegetarian species also heavy on marine algae.
From the color, it looks like the tank has either bright white. or none at all.

The light is blue and white. Depending where his positioned in the tank it comes out more white but my phone picks the picture up more on the blue side then in real life
When do they stop growing? Like dovii that max out 5+ years?

Sorry to hear. Do you know at what age the males
become infertile? I want to enjoy him for a few more years before I try my hand at breeding. His the last man standing at my neck of the world and would be truly sad if the species dies out over here.

I have no experience with this fish but isn‘t a 100 gallons to small? Just asking, cause I‘m not sure
