one of my 2 6” gar died suddenly, please help

What type of filter are you using? Over time beneficial nitrifying bacteria will establish itself in the filter, on ornaments, substrate, and also on aquarium.
Changing out the cartridge is fine but the bio media shouldn't be removed for now until cycle is complete.

just normal fiber filters. yea thats why i try to keep as much as the original water as possible. is there any possible cause to my gators death

Original water won't help. Water has to be filtered and changed. Media containing beneficial bacteria will help. Again, learn about the nitrogen cycle!

wont all fish die if the ammonia spiked?

yes but all of my other fish is still very healthy as well. this is why im so confused
