it's actually pretty easy if you are doing just the head. remove all or as much flesh as possible and use something to keep the mouth open to the way you want it, I didn't even trim the lip you can if you want to or just pull them down, the skin will shrink while its drying so the teeth will be exposed anyway.
I didn't use baking soda or anything, just simply place it in a hot and dry area for few days to a week or longer depends on size and temperature/humidity of where you put it. I place me on top of the furnace during winter. once it's completely dried it shouldn't smell, it might still has some fishy smell if you put your nose up against it but over time it shouldn't smell at all.
I don't like to do the entire fish with baking soda cuz I think it look weird when done and there's no color left anyway so I rather just keep the head.
best would be do something like this but it's better to be left to the professionals.

Yeah I just did the Teeth because the whole head probably would freek me out, plus i would have gotten the pro job done but it slipped my mine:cry:, Where will I ever find another Marginatus like that:cry:
 
definately mounting mine like that^. just found out a buddy of mine does taxidermy.
