dont know the exact answer but im pretty sure its because they are fish and they live in water. no other creature is so dependant on their environment and surroundings as fish are, afterall, they live in it. crappy explanation but it works for me!!
 
To be honest, it really depends on the fish.

How many people do you think actually acclimate a fish properly? Floating the bad and then dumping it does not kill the fish, even most of the time.


In addition, if you do regular, large water changes, your tap water should be very close to tank water anyway.

I believe what happens is a rapid loss or gain of ions, when dealing with nitrogen, pH, or hardness levels. With temperature, I am not sure of the physiological explination.
 
You guys realize that hard core discus breeders do 100% water changes all the time. And yes, they just let the fish flop around on the bottom of the tank. Sounds nuts to me, particularly with the value of those things, but they do it....
 
Replacing all your water will lead to recycling your system (filter, substrate, driftwood surface layer, etc) due to the inevitable die-off of your bio-filter as the result of removing the bulk of the material these organisms feed on.
