the fake plants look great, well arranged and much better than I could do!

I was thinking about rainbows but i wanted to focus more on south american fish

if i were you...i would get fish that normally eat plants because then you will have the best ofboth worlds. cool fish that no one else can have in a realistic (looking) planted tank

That is very impressive, even with fake plants.

The stock list looks good. When you pick out the tetras, I would recommend a large school of a single breed instead of a mix of breeds. Most of the time, they prefer to school with their own type.

I was planning on getting large groups of 15 or 20 of a few species

Would silver dollars be able to live with some of the smaller tetras? Cardianals for example

No, they won't. What species are your plecos? You could try diamond tetras and Columbian tetras.

I havn't got the plecos yet. Are there any species that are better than others?

i think a nice school of cardinal tetras would look nice in that tank =]
have fun with it

Could try the following:

Panaque maccus
Ancistrus sp.
Queen arabesque
King tiger
Columbian zebras
L010a
Rineloricaria parva

The smaller ones are always better for planted tanks than large ones.:)
